Guacacola

Ingredients:

  • 700gr panela sugar

  • 300gr white sugar

  • 1 orange - peel and flesh

  • 1 lime - peel and flesh

  • 1 grapfruit - peel and flesh

  • 1 pinch coriander seeds

  • 4 avocado leaves

  • 1 star anise

  • 1 nutmeg pinch

  • 1 cinnamon stick

  • 10 black peppercorns

Instructions:

  • On a hob, add sugars to a pan and gently cook

  • Once melted, add water and leave for 5min

  • Add peels and spices. Cook for 15min

  • Add agrume fleshes and nutmeg. Cook 15min

  • Strain and store in bottles, in the fridge.

Serving instructions:

  • 1cl lime juice

  • 3cl guacacola syrup

  • soda water

In a glass, place 3-4 ice cubes. add lime juice and guacacola syrup. Stir well. Top up with soda water and gently stir
